Variety: Sauvignon Gris

Varietal Notes:

This wine grape is one for the winemaker's cellar and as much a discussion piece as a crowd pleaser. Handle like a Pinot Gris to avoid turning the wine rose and ferment clean with a yeast like QA23 or D-47

*Characteristics:**					This cousin to Sauvignon Blanc generally matches in acidity, but often comes in at a higher Brix level, which contributes to better aromatics and a subsequent fuller mouth. The grape is actually most often sought after due to its rarity and can now be obtained from Chile or Bordeaux
*Aromas/Flavors:**					Clean and Crisp with noticable citrus, including orange and lime, touch of flower and spice
Food Pairing:					Pairs well with green salads, cheeses, various nuts, and a variety of seafood dishes. A hearty relative of Sauvignon Blanc and Chardonnay alternative.
