Unless noted pailed juice will ferment to dry and with winemaking variation the other types can be produced.

*Characteristics:**					See glossary entry Not a variety, but a white wine produced from the Soave area of Italy. The wine is produced from Garganega followed by Chardonnay, Pinot Blanc, and Trebbiano grape from the Soave area (near Venice). This wine from this area comes in three styles dry (still), spumante (sparkling), and recioto (sweet). Soave is Italian for “smooth” and appropriately so for the wine is generally mild with gentle acidity and a straw yellow color.
*Aromas/Flavors:**					Delicate and light, hint of almonds, gentle perfume and floral
Food Pairing:					Hors d’oeuvres, soups, and light dishes – serve lightly chilled (~45 degree F)
