Malvasia represents another white variety of versatile potential. From light-weight to full, dry to sweet, even as a sparking wine, there is much to do with this grape. In italy it is often paired with Trebbiano to make light and dry Italian whites. It is also used in the production of Vin Santo, which can be done as either dry or very sweet.
Characteristics*:
Regardless of style, Malvasia Bianca offers some pleasant aromas and flavors. Fruit forward, the finish will vary based upon residual sugar and cellaring. The lightest versions offer a clean, crisp finishes. Those barrel aged may display light tannins and a hint of vanilla. Sweeter, more opulent versions linger on the palate.

Food Pairing:
Seafood antipasto dressed with oil and lemon and grilled vegetables for the lighter wines. Grilled fish for the fuller wines. For the dessert wines consider some Italian dessrt pairings of biscotti, cannolis, or a pitted fruit tart.
Aging**:
the lighter versions should not be aged, more fuller ones perhaps as much as two years, and the dessert styles can age much longer.
