Each three hour class, limited to 18 students, will be taught by Robert Herold, M&M Wine Grape Co.'s winemaker,and will cover a brief overview of winemaking, grape varieties (vitis vinifera and hybrids), purchasing ideas, equipment requirements, yeasts, additives, sanitation, and detailed steps for consistently making good white and/or red wine. Class will provide in depth instruction on making wine from both juice and grape.
Classes are scheduled as follows:
- Tuesday August 3rd, Tuesday August 17th, Tuesday August 31st, Tuesday September 14th
Sample wines, cheese and crackers will be provided along with a notebook for each student and memento wine glass.

Each approximately 90 minute class, limited to 18 students, will be taught by Robert Herold, M&M wine Grape Co.'s winemaker. The class will examine the proper method of wine tasting and wine judging. Knowing what retail store wine score numbers indicate will help the students select appropriate wines and also allow them to provide their own scores on unevaluated wine selections. This tasting ability will be a great aid to the students wine making skills as well. Students will taste and score a white and red wine and will be encouraged to bring their home wines for class scoring. All wines will be blind tasted and home wine makers will not be identified. .

A grasp of the how and why of such tests are important for improving winemaking skills and consistently producing fine wine.

Have you ever experienced a cloudy wine? Have you had trouble clearing you wine? Would you like to know how to minimize the chance of such problems? If you answered yes to any or all of these questions, then this class is for you. Our winemaker, Robert Herold, will walk you through the whole Fining process, identifying the most common agents you might use. Each will be discussed for appropriate application, dosage, and post-fining racking.

This class provides students with a detailed understanding of the specific importance of the three most important characteristics of wine making; sugar, acids, and pH. This lecture and discussion class will emphasize the assessment and management of these elements. Upon completion of this class, students will have a better understanding of the appropriate relationship between these elements and how to manage these elements to positively affect the quality and longevity of the wines they make.

* Students must register and pay prior to attending a class. Should a student need to reschedule a date to take the class, a credit will be given to that student for the same class offering at a later date and provided the student notifies us prior to the class taking place. Five students are required for any class to be held. If M&M Wine Grape, Co. should need to reschedule a class, the student will be notified via the contact information that is on file at M&M and will be given the option of obtaining a refund or credit toward another class date.

For those of you interested in learning about growing your own grapes here in Connecticut, Naugatuck Valley Community College is once again offering this popular 14 week course. The class is held every Monday evening from 5:30 to about 9:30 at the Waterbury campus, right off I-84, exit 18. The class is taught by our winemaker, Bob Herold, who also has his own vineyard and provides vineyard consulting services.
