Learn To Make Great WineWine Classes at M&M Wine Grape Co.

Introduction to Winemaking - 101

Each three hour class, limited to 18 students, will be taught by Robert Herold, M&M Wine Grape Co.'s winemaker,and will cover a brief overview of winemaking, grape varieties (vitis vinifera and hybrids), purchasing ideas, equipment requirements, yeasts, additives, sanitation, and detailed steps for consistently making good white and/or red wine.
Class will provide in depth instruction on making wine from both juice and grape.

Classes are scheduled as follows:

  • Mon 4/30
Sample wines, cheese and crackers will be provided along with a notebook for each student and memento wine glass.
 
Weekday Classes 5:30PM - 9:00PM
Students must be 21 years of age to participate in tastings.

Wine Judging - 121

Each approximately 90 minute class, limited to 18 students, will be taught by Robert Herold, M&M wine Grape Co.'s winemaker. The class will examine the proper method of wine tasting and wine judging. Knowing what retail store wine score numbers indicate will help the students select appropriate wines and also allow them to provide their own scores on unevaluated wine selections. This tasting ability will be a great aid to the students wine making skills as well. Students will taste and score a white and red wine and will be encouraged to bring their home wines for class scoring. All wines will be blind tasted and home wine makers will not be identified. .

Classes are scheduled as follows:

  • Summer/Fall 2012 ongoing Monday, Wednesday and Saturday according to student enrollment. Call for current schedule.

Sample wines, cheese and crackers will be provided along with a notebook for each student and memento wine glass. Students must be 21 years of age to participate in tastings.

Basic Lab Skills for Winemakers - 201

Each three hour class, limited to 18 students, will be taught by Robert Herold, M&M Wine Grape Co.'s winemaker,and will cover basic lab testing operations associated with winemaking. A grasp of the how and why of such tests are important for improving winemaking skills and consistently producing fine wine.

Classes are scheduled as follows:

Clarifying Wine with Fining Agents (Advanced Course) - 202

Have you ever experienced a cloudy wine? Have you had trouble clearing you wine? Would you like to know how to minimize the chance of such problems? If you answered yes to any or all of these questions, then this class is for you. Our winemaker, Robert Herold, will walk you through the whole Fining process, identifying the most common agents you might use. Each will be discussed for appropriate application, dosage, and post-fining racking.

Classes are scheduled as follows:

  • Summer/Fall 2012 ongoing Monday, Wednesday and Saturday according to student enrollment. Call for current schedule.
Sample wines, cheese and crackers will be provided along with a notebook for each student and memento wine glass.
 
5:30 - 6:00 Wine and Cheese Sampling
6:00 - 7:30 Lecture and Q&A Session
 
Students must be 21 years of age to participate in tastings.

Understanding Sugar, Acid, & pH - 203

Each two hour class, limited to 18 students, will be taught by Robert Herold, M&M Wine Grape Co.'s winemaker. This class provides students with a detailed understanding of the specific importance of the three most important characteristics of wine making; sugar, acids, and pH. This lecture and discussion class will emphasize the assessment and management of these elements. Upon completion of this class, students will have a better understanding of the appropriate relationship between these elements and how to manage these elements to positively affect the quality and longevity of the wines they make.

Classes are scheduled as follows:

  • Summer/Fall 2012 ongoing Monday, Wednesday and Saturday according to student enrollment. Call for current schedule.

* Students must register and pay prior to attending a class. Should a student need to reschedule a date to take the class, a credit will be given to that student for the same class offering at a later date and provided the student notifies us prior to the class taking place. Five students are required for any class to be held. If M&M Wine Grape, Co. should need to reschedule a class, the student will be notified via the contact information that is on file at M&M and will be given the option of obtaining a refund or credit toward another class date.

M&M's Winemaking Bootcamp (10 week hands-on)

You've asked for it and once again, we've responded. The only hands-on winemaking bootcamp in the area. No need to spend thousands.

The M&M School of Winemaking and Appreciation is pleased to announce the start of a ten week class for beginner winemakers in the art and science of making wines. The course will offer each student the opportunity of experiencing hands-on winemaking, producing their own five gallons of wine by the end of the semester. In addition to actually making wines, the course will cover the science behind modern wine making and fermentation techniques including additives commonly used by commercial wineries throughout the wine making world.

Classes will be about 3 hours each Monday evening, starting at 5:30 pm, in the offices and winemaking showrooms of M&M Winegrape Co, 101 Reserve Road, Hartford, Ct, 06118.

Robert Herold will once again be teaching the class after successfully doing so for many years at Naugatuck Valley Community College, in Waterbury Ct. His background also includes maintaining his own private vineyard and winery, as well as providing technical assistance to several private and commercial vineyards and wineries in Ct, Mass, and NY. He also teaches a number of wine related classes at the Brooklyn Botanic Gardens in Brooklyn, NY. He is a past national Director for Educational Services of the American Wine Society, a contributing writer for WineMaker magazine, a past Liaison for the Connecticut Vineyard and Winery Association (CVWA), a regular member of Amenti del Vino’s wine judging panel, and instructor in residence here at M&M Winegrape Co..

We are currently accepting enrollment for this 10 week course with lecture and hands-on labs. The cost $300/student plus the cost of grapes for the 5 gallon batch.

4 Yeast and additives (nutrients, sulfites, oak dust, sugars, acids, tannins, M-L, M-L nutrients, etc)
   
5(early start)Pick up grapes, crush and destem, preliminary readings and adjustments as necessary, possibly pitch yeast, punch down schedule

6 Press wine into tanks/carboys
   
7 First rack, monitor wines, aging, blending, cellar operations - preventing/correcting problems
   
8 Second rack, pitch M-L and nutrients, sweet wines, sparkling wines, fortified wines.
   
9 Third rack, wine analysis and preservation
   
10 Catch up, bottle, further instructions
